Carrot Cake

Best carrot cake recipe comes with white cream cheese frosting. Added with nuts like, pecans or walnuts and cinnamon, ginger and ground mixed spice with carrots, pineapple, raisins and shredded coconut gives the rich and amazing flavor.

Ingredients:
3 cups carrot hand-grated
2 1/2 cups all-purpose flour 
2 teaspoons ground cinnamon
1/4 teaspoon allspice
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 cup brown sugar
1/2 cup granulated sugar 
3 eggs, room temperature
1 cup vegetable oil 
1 cup raisin
1 cup crushed pineapple 

ICING
1 cup unsalted butter, room temperature
12 oz cream cheese, room temperature
1 1/2 teaspoons vanilla extract
2 cups powdered sugar
2 cups walnuts, crushed

Method:

Step1: Preheat your oven to 350 degrees F and prepare three 8" cake pans. grease and place parchment paper.

Step2: In a bowl mix sugar, oil, eggs, cream, pineapples, and vanilla together.

Step3: In another bowl, mix together  all dry ingredients and whisk. Now add into the eggs batter and mix to combine.

Step4: Fold carrots and pecans into the batter and pour the batter equally into three cake pans. 

Step5: Bake for about 40-45 minutes, also check a toothpick comes out clean.


Step6: Let it cool completely. Set over a wire rack.

Cream Cheese Frosting:

Take butter and cream cheese in the bowl and cream them with an electric mixer. Add vanilla and confectioners sugar and mix until smooth creamy icing.

Cover the cake with cream cheese frosting and chopped walnuts. 
decorate with marzipan carrots and enjoy..


Is Carrot Cake Good for Health?
