Ingredients :
1 cup Butter
1/2 cup self-raising flour
1/4 cup plain flour
1/4 cup cornflour
3/4 cup caster sugar
4 eggs
2 teaspoon vanilla
1 cup milk
2 teaspoons baking powder
1/3 cup strawberry jam
Chocolate Glaze and Topping:
4 Tablespoons Butter
3 tablespoons cocoa powder
8 ounces dark chocolate
1 cups powdered sugar
3/4 cup milk
3 cups desiccated coconut
1 cups powdered sugar
2-3 tablespoons warm water
So let's get started.
Step1: Preheat oven to 180°C and prepare two cake pans of 20cm with melted butter to grease. Yon can also use baking paper for the sides.
Step2: Softened butter and sugar until creamy and fluffy with the electric mixer and then one at time add eggs and vanilla to make them completely combined.
Step3: In an another bowl, combine together the self-raising flour, plain flour, cornflour, baking powder and salt.
Step4: Now add the dry mixture (Flour mixture) into the creamy mixture and fold it slowly, It will become a thick mixture at tis point add the milk and mix it well.
Step5: Divide the mixture into the pans and bake for 20-25 minutes. The cake will be golden and firm, Set aside for few minutes to cool completely.
Step6: Spread jam filling on the cake and place other cake on top.
Step7: To make the chocolate Glaze, combine all the ingredients into a pan and heat it on the double boiler until completely blend and smooth.
Step8 : Cut the sandwiched cakes into square pieces, Coat with a chocolate glaze and roll in desiccated coconut to coat. Let it sit aside for 5-10 minutes before serving.
